“U BACCAN” PIGATO Riviera Ligure di Ponente DOC

A careful selection of grapes from our oldest vineyards, over 50 years old. U Baccan, the local dialect word for “boss”, expresses the Pigato variety’s complexity and great personality. Over the years, it has proven its excellent potential for ageing.

Grape variety: Pigato

Description:: intense straw-yellow colored with bright gold-green nuances. Depth and purity on the nose: aromas of Mediterranean aromatic herbs (sage, thyme, resin), ripe yellow fruit (peach and mango), citron rind, acacia honey with a fine silica silica. Mouth-filling, balsamic and mineral on the palate, ending on a note of savoury almond and candied citrus fruit.

Place of origin: mostly from the Russeghine vineyard, grown on a red clayey soil rich in ferrous minerals and, to a lesser extent, from the Garaxin vineyard grown on blue clayey soil dating back to the Pliocene, rich in micro and macro fossil fauna. Very low yield per vine.

Vine training technique: Guyot and Gobelet. Very old vineyards, over 50 years old.

Harvest date: mid-September, grapes are picked manually and placed in 20-kg perforated crates.

Winemaking and ageing: soft pressing, removal of solid matter from the must and beginning of fermentation in steel. Fermentation and ageing in barrel on the lees without racking for ten months. Bottle ageing for eight months.
